Key Lime Pie Ice Cream


Homemade popsicles? Check! Make homemade ice cream? Check! I love the ice cream recipe, I've made it before but never for Oliver. He LOVED it. It's tangy, sweet and delicious. I think it tastes very summery! The ice cream recipes is adapted from Cooking Light, so it's not even that bad for you. I skipped the graham crackers, but only because we didn't have any in the house. You can throw this recipe together in about 3 minutes and the ice cream maker does the rest.



Key Lime Pie Ice Cream

Ingredients
1 1/2 cups 1% reduced-fat milk (or 2% for creamier ice cream)
2/3 cup lime juice (or 1/2 cup if you can get key limes)
zest of one lime
dash of salt
1 (14-ounce) can fat-free sweetened condensed milk
6 graham crackers (1 1/2 cookie sheets), coarsely crushed (optional)

Mix all the liquid ingredients together with a whisk in a medium bowl. Add ingredients to the freezer bowl of the ice cram maker and freeze according to the manufacturer's directions. When the ice cream just starts to thicken, add the graham crackers if desired. This will keep them from all being stuck on the bottom.
